Double Washing Protocol: Cherries are pulped and fermented, then washed through multiple channels to sort by density. A further 24-hour soak in clean water follows the initial wash to enhance clarity and sweetness 2. Drying: Parchment is sun-dried on raised African beds over 2–3 weeks, depending on ambient weather conditions, with frequent raking for even moisture reduction. 3. Post-Drying: Beans are conditioned on-site in bins to stabilize moisture before milling, grading by screen size, and packing in GrainPro-lined bags for export.
